For non-stainless steel (pure carbon steel or low-alloy tool steel) blades, the extremely fine grain size of the heat-treated material handled with great expertise can be retained at a high level of hardness. Thus an extremely thin, durable, crack- and splinter-resistant cutting blade can be created. However their re-sharpening is easier as they lack the high chrome-content that would be required for stainlessness, which would make this truly difficult. It is essentially the grinding that determines the achievable sharpness, providing the user with a truly unique experience. Such blades require more attention, more careful surface maintenance, dry-keeping, sometimes thin oiling, which is a slight burden in light of their impressive efficiency and longevity.
